Spaghetti Squash Veggie Nests

Wondering what to do with leftover spaghetti squash? These nests are a delicious accompaniment to any meal!

Ingredients:

Cooked Spaghetti Squash

1-2 cups Broccoli, shredded

1-2 cups Zucchini, shredded

1/2 cup grated parmesan or mozzarella or goat feta (lessen or increase by preference)

2 eggs

1 tsp garlic powder

1/4 tsp sea salt

Black pepper to taste

*You could try any variation of vegetables to add to the nests (cauliflower, greens, mushrooms, etc)

Method:

  1. Preheat oven to 400 convection
  2. Grease a non-stick muffin tin with coconut oil
  3. Spoon the spaghetti squash into each space, to form a shape of a nest
  4. Bake for 10-15 minutes on the upper rack and until the squash just starts to get "crisp" on the edge
  5. With a Starfit shredder or food processor grate the broccoli and zucchini.
  6. Beat 2 eggs and add to the veggies. Add the seasonings and cheese and mix together
  7. Remove the muffin tin and scoop the veggie mixture onto each nest
  8. Bake for another 10-12 minutes. Finish on broil for 1-2 minutes
  9. Allow to cool (if you can!) and scoop out the nests and enjoy!
